- Sweet potatoes: According to the American health authority CSPI, they are one of the most nutritious vegetables due to their valuable fibre and high beta-carotene and vitamin E content.
- Pumpkin: It is one of the lowest-calorie vegetables and is rich in vitamin C, beta-carotene, minerals and phytosterols. The fibre it contains makes it very digestible and aids digestion.
- Jerusalem artichoke: It contains a high proportion of inulin, which has a prebiotic effect and stimulates the growth of healthy bacterial strains in the gut. A healthy intestinal flora has a positive effect on the immune system.
